The vinification process for La Marginale is equally meticulous. Grapes are harvested by hand and carefully sorted to retain only the finest. Fermentation takes place in wooden vats, with light pumping-over, followed by a maceration period of 22 to 24 days to extract the essence of the cabernet franc grape. Malolactic fermentation in 25 hl wooden vats adds a silky, complex touch to the wine, followed by 12 months of aging in large oak casks.
